INGREDIENTS:
· One 24.4 Ounce jar of Spice Spice Baby’s Southwest Black Bean Soup Mix.
· 8 Cups of Water
· One 12 Ounce package of Boars Head Chorizo Chicken Sausage (or any Chorizo). Sliced into medallions.
· ½ Cup Sour Cream (optional)
· 1 ½ Cups Shredded Mild Cheddar
· 1 Bunch of sliced green onions (optional)
· 1 ½ Cups of Fritos.
METHOD:
1. In a crockpot set for four hours on the high setting:
2. Add the Soup Mix, water and the cut-up chorizo.
3. After four hours, drop the setting to the “warm” setting.
4. This recipe yields 6 one cup servings.
5. Top each bowl with the cheddar, a dollop of sour cream, green onions, and Fritos.
